Favorite Iced Latte

Sharing my favorite iced latte recipe today! During the Summer I drink a lot iced lattes and I make them myself at home.

I like to use some flavored syrups for my lattes, but you can just have it with coffee and milk if you like.

To make my iced latte, I use my Nespresso machine.  I *love* my Nespresso machine. This is our second one we’ve owned… we started with a cheaper model over 5 years ago.  However when they came out with this model which has a steam wand, we upgraded.   The steam wand makes hot lattes just like in the coffee shops.  It can also make cappuccinos, latte macchiatos, and flat whites. You can also steam milk without making a coffee. The machine itself heats up in less than 1 minute and you’re ready to go!nepresso iced latte

I like the Nespresso because there is basically no clean up.  You just use a coffee pod, pop it in and hit a button.  Then when you are done, you lift up the lever, it falls down into a little trash collection in the machine.  The Nespresso pods cost between $0.60 to $1.20 for special editions, most of them are $0.70 each.  Much cheaper than Starbucks, and frankly way tastier!

Now, my recipe is really simple, and based more on what size cup I’m drinking out of.  The bigger the cup the more ice I put in.

Iced Latte Recipe

  • 1 Nespresso Coffee Pod (I use their limited edition Iced Coffee Pods)
  • Several Scoops of Ice
  • 3/4 cup milk
  • 2 pumps of flavored syrup (optional).

Make your coffee.  Add the flavored syrup.  Then the Ice. Then the milk. Stir. DONE. I confess I don’t actually measure the milk.  I have made this enough that I eyeball it until it looks to be the right color.

I drink at least one of these a day – usually two.  Two is the equivalent to a Grande at your local coffee store.  We like to purchase the sugar-free Torani syrups.  I usually find them at Cost Plus World Market.  Sometimes we find them at Home Goods.  If I can’t find them, they are always available on Amazon.  The pumps are available at Cost Plus World Market.  The sugar free tastes very similar to the regular sugar syrups but has zero calories.

Let’s talk about Nespresso Models.  There are a ton.  FYI, I was not paid to write about it.  I just love Nespresso – I think now all of my family members have one!

This is the Nespresso model we have with the steam wand. They came out with another smaller model with a steam wand that is slightly cheaper.  This one hooks up with the smartphone and can be set to have a coffee ready in the morning.  This one is your cheapest introductory model that will still make a great coffee.  This one can do both espresso shots and drip black coffee.

Honey Vanilla Latte

After going to Urth Caffe recently where I had their fabulous honey vanilla latte, I thought to myself, why not make it at home?

The funny thing, after searching google and pinterest, almost NO ONE had any honey vanilla latte recipes!  All of them were for chai tea or other tea lattes.  This one is with coffee. 

Honey Vanilla Latte Recipe

Ingredients

  • 1/2 cup of very strong coffee (or 1 pod of Nespresso)
  • 1 1/2 tsp of honey
  • 1/2 cup of hot skim milk
  • 1/4 tsp of vanilla extract

Instructions

  1. Brew your very strong coffee.  When the coffee is very hot, add the honey and stir.  The hot coffee will dissolve the honey. Then add the vanilla.
  2. Heat up your milk, either on the stovetop until just frothy or in the microwave in 30 second increments.  (If you want to have lots of froth like my pictures, use a milk frother.)
  3. Add your milk to your coffee and stir.  Enjoy!

ICED HONEY VANILLA LATTE:

To make an iced latte, don’t heat up the milk.  Instead mix in cold milk, then pour the latte over ice cubes.

Copycat Pumpkin Spice Latte

I updated my pumpkin spice latte recipe.  I posted one last year, but after some trials through the season I’ve altered it.  I can’t keep going to Starbucks (I said that last year too!).

Copycat Pumpkin Spice Latte

Ingredients

  • 3/4 cup fat free milk
  • 3/4 tablespoon canned pumpkin
  • 1-2 packet of sweetener or sugar
  • 1/2 tsp vanilla extract
  • 1/4 teaspoon pumpkin pie spice (or 1/2 tsp for a spicier drink)
  • 1/2 cup strongly brewed coffee (or 1 nespresso pod, either lungo or regular)
  • Whipped cream, optional

Instructions

  1. In a saucepan, whisk together milk, pumpkin, and sugar/sweetener on medium heat.
  2. Once steaming, mix in vanilla and pumpkin pie spice.  Whisk quickly so it develops a nice foam.
  3. Add to brewed coffee.
  4. Add whipped cream to the top (optional), with a dash of pumpkin pie spice.

I estimate the calories to be around 60-70 with this cup of pumpkin spice latte!

Copycat Dole Whip with DIY Pineapple Party Cups!

Ok, first you start with your pineapple:

And then with some magic…

Ok, so it’s not really magic. But, there’s a REALLY cool tool that let’s you do this.

Look! It takes out ALL of the delicious fruit and leaves behind the core and outside!

Um. WHOA. I never liked buying pineapple before because it always made a HUGE mess to cut it up and it took quite some time.

This took about 1 minute.  And you can see the big mess it left behind in the above pictures (nope, didn’t clean the area for a pretty picture! there was no mess!)

So, here’s where you can get this cool gadget: Pineapple De-Corer and Slicer OR get it HERE

And you’re left with this hollow shell of a pineapple, which is perfect for… drinks!

Copycat dole whip recipe with DIY pineapple cup

Copycat Dole Whip Smoothie Recipe (adapted from Pinterest… couldn’t find original owner)

PRINTABLE RECIPE HERE

Ingredients:

 

1 whole fresh pineapple (or 2-3 cups frozen pineapple chunks)
1 cup almond milk
1 tbsp honey (optional)
ice (optional: would use for fresh pineapple if not doing the zoku method below)

Directions

 

  1. Add all ingredients into a blender. If doing the zoku method, omit the ice.   Enjoy!
  2. If doing zoku method, pour contents into your zoku slushie cup.

Get a Zoku Cup HERE. It is seriously THE BEST thing to happen to Summer.

Oh PS. It makes the BEST root beer floats. They also have pops here.

 This pineapple party cup would be great for Hawaiian themed parties, tropical parties, luau parties! You could add multiple straws to it.  I used my fun silly straw and sat it around the core to make it stay in place.  You could always remove the core!

Are you addicted to Starbucks’ Caramel Macchiato?

Delicious!

Yeah, me too.  I find myself going to Starbucks just to get this drink these days so I thought… why not make my own?

I’ve watched them make it a hundred times.  It’s not that hard to make.

see one, do one, teach one.

All you need is…

Vanilla Syrup
Milk
Espresso
Caramel drizzle

I’ve included two recipes to make this:

The ORIGINAL recipe (that I’ve seen made a hundred times) is this:

  • 3 pumps of vanilla syrup 
  • milk
  • 1-2 shots of espresso (depending on your size tall =1 shot, grande =2)
  • caramel drizzle.

1. Add 3 pumps of vanilla syrup to your cup.  Steam the milk.  Pour milk into cup.
2. Add the espresso to the top of the foamed milk.
3. Add caramel drizzle to the top in a criss-cross pattern until you are satisfied. DONE!

  • 1/8 tsp vanilla extract
  • 1 pack splenda
  • 1 cup milk
  • 1 shot espresso
  • caramel sauce (I used Ghirardelli’s but the Smucker’s ice cream topper should work too)

1. Steam your milk and froth it either with a frother or whip it up yourself and then pour into cup. Add the vanilla and splenda to the milk and stir.
2. Add the espresso to the top. (For Nespresso users: I used the purple Arpeggio pod. Keurig users: 1/2 cup really dark coffee).
3. Add the caramel sauce to the top. Done!

Some recipes ask you to make your own vanilla syrup.  I am too lazy to do that and feel like this is a nice alternative. You could always go buy Starbuck’s vanilla syrup too.  I might just do that.

Eggnog Latte

Easy DIY Eggnog Latte Recipe

Eggnog lattes are my favorite Christmas drink.  All of your favorite coffee shops charge $4-$5 for one.

They also have 400 calories in them too.

Not this one.

INGREDIENTS: PRINTABLE RECIPE HERE
– 1/4 cup of eggnog (either full fat or light fat)
– 3/4 cup of milk (either non fat, 1%, or 2%)
– Strong coffee
– Nutmeg for drizzle

For non-Nespresso users:

  1. Brew 1/2 cup of strong dark coffee.
  2. In the meantime, heat milk and eggnog together in the microwave until warm.  Whisk quickly to create a foam on top. 
  3. Mix the milk/eggnog and coffee together.  Adjust amount of eggnog to your own taste.
  4. Drizzle nutmeg on top. Enjoy!

For Nespresso users:

  1. Choose a pod type. To make the latte exactly as pictured I used the blue lungo, Vivalto.  I usually prefer the purple regular one, Arpeggio.
  2. Add eggnog and milk to the Aeroccino.
  3. Mix the two.
  4. Drizzle nutmeg on top. Enjoy!

To make the eggnog latte a bit more calorie friendly, use either less eggnog, use low-fat eggnog, as well as using non-fat milk.

This homemade eggnog latte is delicious, budget friendly, and friendlier to your waist line!
