Ever since watching one of my favorite tv shows, Unique Sweets, I have wanted to visit Salt & Straw Ice Creamery.  Only problem was that they are only located in Portland, Oregon!!

On my Northwest Summer trip that I recently got back from, I stopped by Salt & Straw. First off, what a clever name.  Like how ice cream used to be made: with salt and straw!

There was a long line out the door but it seemed to move pretty quickly.  They let you sample several flavors, which is mainly why it takes so long.

What’s so special about Salt & Straw’s ice cream?! Their unique flavors!

 

They have flavors like: Coconut with salted caramel bars. Pear with blue cheese.  Coffee and bourbon. Cucumber and raspberry sorbet.

We tried a total of three flavors.

I felt like I was a eating a candy bar with ice cream inside.  The salted ganache was interesting.  It helped overcome with sweetness of the almond brittle and the ice cream.  But I couldn’t finish it all. (Usually I can finish ice cream no-problemo… don’t know if this is a plus or a minus!).

This ice cream actually tasted like sea salt.  The caramel is not salted.  The ice cream has a very nice smooth texture.  While the flavor combination was good, I felt like I was eating a savory dessert, which isn’t quite what I was looking for.

This one was my favorite.  It was a frosting flavored ice cream with chunks of what seemed like sugar cookies in the ice cream, with blackberry swirls inside.  Loved the blackberry swirls.  This ice cream was very very sweet.  I think either I need a smaller portion OR less cookie swirled inside.

 

Final Words

I felt like a lot of these ice cream flavors were more savory in nature.  Like more of an after dinner dessert.  They weren’t as refreshing as other mid-afternoon ice creams because of the saltiness and then also the extreme sweetness.  I hate to say it, but sometimes I just like plain ol’ mint chocolate chip or vanilla.  There’s a reason why they are bestsellers in America.  I think next time I will actually go for their “Double Fold Singing Dog Vanilla”.  I would give them another try and recommend at least trying them once.

Potato Rosemary Pizza Recipe

I love potatoes. I love pizza. How about… potato… pizza. Potato pizza!  I was first introduced to this type of pizza at Katie’s Pizzeria in St. Louis.  However, I have since moved.  But… I still want the pizza!  This pizza has been a few years in the making.  My husband and I have been trying to figure out how to make it taste like our original.  I don’t know if this tastes *exactly* like the original, but what we’ve come up with is really good!

Potato. Rosemary. Pizza? Huh? Now, don’t wrinkle your nose yet.  Let me share some pictures first.

See, doesn’t it look good? Or if you aren’t sold, maybe another view?  Below is pizza from a different day, but it is the same thing!

Or maybe some words to sell you?  This is my FAVORITE pizza. My husband (the master chef) is the pizza maker.  Whenever he asks what type of pizza I want, I always say potato. I think he might be sick of potato pizza.  (I just asked him, he says no).

We bake the pizza on our outdoor grill because it gets hotter than our oven (and bonus – keeps the heat outside!).  We use this pizza stone.

Okay, ready for the recipe? It’s broken down into two parts. Crust and toppings.

POTATO ROSEMARY PIZZA RECIPE: (printable recipe here)

Our Basic Pizza Crust Recipe

Ingredients

  • 2 cups of regular flour (but if you want the best, use the 00 flour)
  • 1 cup of fine corn meal
  • 1 tablespoon of active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • 3/4 cup plus 2 tablespoons lukewarm water
  • 2 tablespoons honey, optional

Directions

  1. Heat the water to lukewarm. Then add the olive oil. (for really yummy dough, add the 2 tbsp honey here)
  2. Dissolve the yeast in the warm water.
  3. Using your bread kneader mixing option on your mixer (we use the option on the kitchenaid), pour the yeast solution into the mixer and mix for 5 minutes.
  4. Now, add all of the dry ingredients to the mixer. Mix on low until it forms a ball.  If it does not form a ball, you need to add more flour or cornmeal.
  5. Once it has formed a ball, knead on low speed for 20 minutes.  I know this seems unnecessary, but it is the most critical part!
  6. After, cover and let the dough sit in a warm, dry place for 1 hour. This allows the dough to rise.  If you want to make your dough ahead of time, place the dough in the fridge overnight and take it out 1 hour before cooking time.
  7. Spread the dough into desired shape. This dough makes enough for two 10″ pizzas, so we separate the dough into two. This makes the shaping of the circular pizza dough a little easier!

Potato Rosemary Pizza Toppings

 

Ingredients

  • 2 small potatoes or 1 large potato (russet, yukon, fingerlings, your choice)
  • 1 parsnip, thinly sliced
  • 1/2 onion (usually yellow, but red is fine too)
  • Extra virgin olive oil, to spread on dough.
  • Mozzarella cheese, pre-shredded is easiest to use
  • Parmesan reggiano cheese
  • pepper to sprinkle on top
  • Fresh rosemary

Directions

  1. Preheat oven to 500F, best cooked with a pizza stone.
  2. Cook the potato prior. (Use the microwave for fastest results. You do not want the potato to be soggy or too-baked).  Now slice the potato into *thin* slices.
  3. Slice the parsnip and onion into thin slices.  You want them to be thin enough for just a crunch. (if you slice them too thick, it will be gross).
  4. Sprinkle olive oil on top of your shaped dough and rub it to cover the area of where the toppings will be.
  5. Place parsnips, onions, and potatoes on top. The KEY to this pizza is having potato in every single bite.
  6. Sprinkle mozzarella (as much as desired), then parmesan cheese (not as much as the mozzarella).
  7. Sprinkle some pepper on top.
  8. If you use a pizza peel (as I do), sprinkle coarse cornmeal on the bottom so the pizza will easily slide off the peel onto your stone.  This is a nice trick.
  9. Place in oven and cook for 8-12 minutes, until it looks done.
  10. Immediately after you take the pizza out of the oven, sprinkle rosemary on top.
  11. Enjoy!
A few things to note: 1. How thinly sliced everything is. 2. the coarse cornmeal on the pizza peel. 3. How there is potato in every bite.

One last close look… oh yum yum. I’m going to go eat some left-over pizza for dinner now.

Zoku Slushie maker!

Have you ever heard of a Zoku slushie maker?  I hadn’t either… until one day I found one at Williams-Sonoma!  I was hesitant about the product, but decided to get two and play with them at home.

the verdict: I love it!

So, how does it work?

You take the inner cup and put in the freezer. It needs about 8 hours to cool down.

When you are ready to make a slushie, take it out!

Now what? Start to make your smoothe in the blender as usual. But do not add the ice!  Blend the ingredients, then pour them into the slushie cold part.  Now you wait.  Let it start to freeze, then you use the little spoon and scrape down the sides of the cup.  What happens is that the smoothies freeze, but you don’t have to add any ice to it!  It takes about 5 minutes to have everything frozen to slush consistency!

What you end up with is a much richer tasting smoothing. No ice melt to dilute it down!

I’ve used it to make:

  • root beer floats (the BEST root beer float I’ve ever had!)
  • iced lattes (fantastic, no ice to water down your coffee!)
  • all sorts of fruit smoothies
  • frozen yogurt
  • frozen lemonade
  • frozen orange crush vanilla floats

I’ve read some of the reviews about it.  Here are some negative things that people say:

  • “The size is too small” – to which I say, you probably shouldn’t really be eating more than 8 ounces of ice cream anyway, so it’s excellent portion control.
  • “It takes too long to freeze” – to which I say, keep it in the freezer at all times. Then it’s always ready for use.
  • “This thing is pointless. You have to use a blender anyway, so why not just blend the smoothie per usual?”- to which I say, this makes more concentrated smoothies… no need for ice to water things down! The smoothies are also smoother. No ice crystals.

Now, do I NEED this product? No. But now that I have it… I absolutely love using it.  Maybe you would too.

Easy & Healthy Summer Pasta Salad

I love eating salads in the Summer.  I had been craving a pasta salad for a while; however, I didn’t think I had the ingredients in my kitchen to make one. I was wrong!

That’s why this recipe is easy: just look in your cupboards and see what you have.

Easy & Healthy Summer Pasta Salad

Ingredients:

  • 1/2 a package of pasta (macaroni or rotini works best)
  • grape tomatoes or 1-2 larger tomatoes, diced
  • 1 bell pepper (any color, I had a yellow one on hand), diced
  • half to 1 whole cucumber, diced
  • Any other vegetables you have on hand: corn, broccoli (chopped up small), olives, small slices of carrots.
  • a few slices of cheddar cheese, cut into tiny cubes (I prefer Tillamook medium-cheddar)
  • 3/4 cup to 1 cup of Italian dressing (I did not have any Italian dressing on-hand, so I have included the recipe I used to make my own below***)

Directions:

  1. Boil the pasta per package directions. Once properly cooked, drain pasta and allow to cool.  
  2. While the pasta is cooling, chop all of your vegetables and cheese.
  3. Make your salad dressing if you don’t have some on hand.***
  4. After pasta is cooled, add vegetables and then dressing. Coat well.
  5. Put the pasta in the fridge for 15-30 minutes to let things marinate and everything cool down.
  6. Enjoy!

***Homemade Italian Dressing recipe (modified from Paleo Cupboard)

Ingredients

  • 1 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp dried mustard
  • 1/2 tsp of salt (I considerably decreased the amount of salt from the original recipe)
  • a couple shakes of ground black pepper
  • 2/3 cup extra virgin olive oil (in my opinion Costco has the best tasting and cheapest EVOO)
  • 1/4 cup apple cider vinegar
  • 1 tsp honey

Directions:

  1. Mix all dry ingredients together in a small bowl. Then add the wet ingredients. 
  2. Shake well just prior to adding to your salad.

Copycat Dole Whip with DIY Pineapple Party Cups!

Ok, first you start with your pineapple:

And then with some magic…

Ok, so it’s not really magic. But, there’s a REALLY cool tool that let’s you do this.

Look! It takes out ALL of the delicious fruit and leaves behind the core and outside!

Um. WHOA. I never liked buying pineapple before because it always made a HUGE mess to cut it up and it took quite some time.

This took about 1 minute.  And you can see the big mess it left behind in the above pictures (nope, didn’t clean the area for a pretty picture! there was no mess!)

So, here’s where you can get this cool gadget: Pineapple De-Corer and Slicer OR get it HERE

And you’re left with this hollow shell of a pineapple, which is perfect for… drinks!

Copycat Dole Whip Smoothie Recipe (adapted from Pinterest… couldn’t find original owner)

PRINTABLE RECIPE HERE

Ingredients:

 

1 whole fresh pineapple (or 2-3 cups frozen pineapple chunks)
1 cup almond milk
1 tbsp honey (optional)
ice (optional: would use for fresh pineapple if not doing the zoku method below)

Directions

 

  1. Add all ingredients into a blender. If doing the zoku method, omit the ice.   Enjoy!
  2. If doing zoku method, pour contents into your zoku slushie cup.

Get a Zoku Cup HERE. It is seriously THE BEST thing to happen to Summer.

Oh PS. It makes the BEST root beer floats. They also have pops here.

 This pineapple party cup would be great for Hawaiian themed parties, tropical parties, luau parties! You could add multiple straws to it.  I used my fun silly straw and sat it around the core to make it stay in place.  You could always remove the core!

Macaron shop review: Sucree

I recently found a new macaron shop! Woohoo! Perfect for my macaron love affair, especially during the Summer when it’s too hot for me to run my oven.

What’s neat about this macaron shop is that they have a TON of different favors every single day.

They post them on Facebook every morning… That way you can see if you’re favorites are being made that day. They not only make sweet flavors, but savory ones as well.

I tried 6 different flavors.

Smore’s: had marshmallow fluff in the middle, chocolate on the outside. Didn’t quite get the graham cracker taste from the shell, but this was good!

Raspberry Creme

Raspberry creme: just okay. I think I prefer to have a raspberry purée or jam filling.

Chocolate almond: chocolately almond filling in an almond cookie. Of course this was good!!

Guava: delicious! This was my favorite one. When I was in Hawaii this Spring I ate a bunch of guava. I saw some guava jam for sale but it was too big to fit onto my liquid carry ons. I was pleasantly surprised with this flavor and may attempt to make my own!

Peanut butter chocolate: tasty filling. I had never had a peanut butter macaron. It was kind of odd having such an American flavor in this French cookie. But I like anything peanut butter so naturally I liked it.
Blueberry lavender: it tasted like lavender. I couldn’t really taste the blueberry. Interesting, but I think I’ll leave lavender for my potpourri.

Final thoughts: I thought their macaron shell was really nice. It had a little crunch on top and then was chewy in the middle. I found that at the other places I have reviewed that the shells are often too soft. And these shells also have the right look: cute little feet with flat tops. I wish there was more color variation in the ones I had ordered but oh well.

If I had to choose between macarons from Lette, Sucree, and Bottega Louie… I would choose macarons from Sucree!

French Quimper Plate Find!

Recently at the Pasadena Flea Market I found… a Quimper plate!

It was the first thing I bought at the show… and can you guess how much I paid for it?

$2! Yep! TWO DOLLARS!  That’s it! Can you believe it?

Based on the markings on the back of the plate, I believe it was made sometime between 1922-1968.  Not too bad! Not antique, but definitely not new!

I put the plate above this painting which is with my other Faience plates.  Now that I put it above the painting… I think I may need some more to go above the painting as well? What do you think?
