Cranberry, Brie, and Thyme Puff Pastry Bites

My husband and I love to host Thanksgiving – I think it is because he loves to cook, we both love to bake, and I love to set up pretty tables!  

We’ve been hosting Thanksgiving for 3 of the past 4 years (last year couldn’t host it)… but we actually don’t host it on Thanksgiving. We host it either on Black Friday or that Saturday.  Thanksgiving not-on-Thanksgiving we call it.  It’s nice because we can usually have more family members over! Plus, what do you do on Thanksgiving Saturday normally? Shopping is Friday so… Saturday is perfect!

Anyway, we always try to find at least one or two new recipes to add or replace each year. We always have appetizers – you know, because we don’t eat enough that day already.

We found this recipe by Well Plated which is cranberry baked brie bites – they were really quite good but we made a few modifications to the recipe which I thing adds a little bit. 

The recipe calls for cutting out 1 1/2″ rounds from cookie cutters – uhhh, turns out I don’t have round cookie cutters. But I do have pie crust stamps!

Ingredients

  • 1 cup fresh cranberries
  • 3 tablespoons orange juice
  • 2 tablespoons water
  • 2 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt
  • 2 10×10-inch sheets puff pastry, thawed 
  • 1 large egg, beaten
  • 4 ounces Brie cheese, cold
  • chopped fresh Thyme, for garnish, roughly 1 tbsp

Directions

1.  Pull the puff pastry from the freezer and let it thaw.


2.  First, prepare the cranberry sauce: Combine the cranberries, orange juice, water, honey, cinnamon, and salt in a small saucepan. Bring to a simmer over medium heat and cook for 10 minutes, until the cranberries break down and thicken. Let cool.


3.  Unfold the thawed puff pastry on a lightly floured work surface. With a rolling pin, gently roll the pastry so that it is an even 11-inch square. With a 1 1/2-inch round cookie cutter ( or pie stamps ) cut circles out of the pastry (makes about 48 rounds total, depending on what size of cookie cutter you use).


4.  Beat the egg in a small bowl, then lightly brush each pastry. One half of the pastry cut-outs, spoon approximately 1/4 teaspoon cranberry sauce and 1 small piece Brie cheese, rind included. Then sprinkle just a dash of fresh thyme on top.


5.  Carefully place the remaining pastry rounds on top of the Brie and cranberry, brushed egg side down. Pinch the ends closed. Prick each pastry with a fork to allow the air to escape. Repeat with second pastry sheet.


6.  Place a rack in the upper third of the oven and preheat oven to 375 degrees F. Line a baking sheet with parchment paper or silpat. Place pastry on the prepared sheet and brush lightly with egg. Bake for 12 to 16 minutes, or until puffed and golden brown. Remove from the oven and allow to cool for at least 15 minutes before serving. Serve warm or at room temperature.


Notes: you can assemble unbaked puff pastry bites and freeze them for later. Do not brush the egg wash on them if you are going to freeze them. Freeze them in an airtight bag. When you want to bake them, pull them out of the freezer and then brush them with the egg wash. Baking temperature is the same – 375, but you will need to bake them a few minutes longer.  You can also fully bake the pastry puffs and freeze them then reheat them in the oven.


They are really quite good! I know my pictures aren’t the best (they were taken entirely by iPhone), I encourage you to give a try! They are really good and super easy to make!

Caramelized Onion, Apple, and Gruyere Tart Recipe

Want to know our #1 Thanksgiving appetizer??  This caramelized onion, apple, and gruyere tart!  The second it comes out of the oven our family gobbles it on up… we have to make double batches so people that arrive a few minutes late can have a bite!  I’m now sharing the recipe with you all because it is SO GOOD.  The secret is out!

Ingredients:

  • 2 Tbs. vegetable oil
  • 1 1/2 lb. yellow onions, thinly sliced
  • 1 tsp. kosher salt
  • 2 Tbs. unsalted butter
  • 1 lb. tart apples, peeled and sliced 1/8 inch thick
  • 1 tsp. sugar
  • 1 1/2 oz. Gruyère cheese, coarsely grated
  • 2 Tbs. minced fresh chives
  • 1 tsp. chopped fresh thyme
  • 1/8 tsp. freshly ground pepper
  • 1 package frozen puff pastry dough, thawed
  • 1 egg, beaten with 2 Tbs. water

Directions:

In a large fry pan over medium heat, warm the oil. Add the onions and the salt and cook, stirring occasionally, until the onions are golden brown, about 30 minutes. Transfer to a large bowl and let the filling cool to room temperature.

Position 1 rack in the upper third and 1 rack in the lower third of an oven and preheat to 400°F. Line 2 baking sheets with parchment paper.

In the same pan over medium heat, melt the butter. Add the apples and sugar and stir to coat the apples. Cook, stirring, until the apples are just starting to caramelize and have softened, about 10 minutes. Transfer to the bowl with the onions and stir in the cheese, chives, thyme and the pepper.

Cut the puff pastry into 2-inch squares and place on the prepared baking sheets, spacing the squares about 1 inch apart. Brush the pastry squares with the egg mixture and place a heaping tablespoon of filling into the center of each square. Season lightly with additional salt and pepper.

Bake at 400F, rotating the baking sheets from top to bottom and front to back halfway through baking, until the pastry is crisp underneath and golden brown on top, about 25 minutes. Transfer the baking sheets to wire racks and let the tarts cool to room temperature. Serve at room temperature or warm. Makes 32 tarts.

Yes, the onions got a bit burned in the oven in the picture above but guess what – there were still no leftovers!

Happy November! I can’t believe it’s already NOVEMBER! It was so hot all October and then right on cue it started pouring and raining all day November 1! It hasn’t rained here in FOREVER.  It was so nice! I actually had to turn on the heat in the house last night! Good now I can finally wear some sweaters!

My husband and I have been busy testing out recipes for Thanksgiving. Below we were playing around with cranberry brie bites.. they were really good! The recipe we used we will make a few minor adjustments, but I think they will work well! *AND* we can make them the day before which is nice!

Pretty Flowers

Husband bought me some pretty flowers as we’ve both been working 6 days a week and haven’t seen each other in like FOREVER… came home late one night and saw these sitting there!  Aren’t they pretty? They are spider mums in a burgundy color… I’ve never seen them in this color! They are also pretty big, like 5-6″ across in diameter!

Have you ever heard of Origami Owl?? Well I have and I recently purchased this “living locket” as they call them… they are customizable lockets that you put little charms in.  You can change the charms depending on your mood.  The one I bought is a keychain which I think is so much fun!  I have an eiffel tower as I love Paris, medical symbol as I work in medicine, an initial, pink stones because I like pink, and because Christmas season is coming upon us… a Christmas stocking, gingerbread house.  The starting “base” is a little bit pricey but once you have on the charms are pretty inexpensive and would make great stocking stuffers!

I had to include a range of things you can do with origami owl because I think it just so clever!No, I don’t work for them and I don’t get paid anything for writing about this.  

You can make yourself a teacher lanyard… holds your name badge, how cute is that?? A lanyard would be perfect for nurse too!

A Christmas themed one… you can make a necklace, bracelets, keychains, lanyards, pins… so much variety!

You can find some retired charms on eBay and some non-name brand charms too… look how cute these nursing themed set is that I found on Ebay! You can find cheaper charms on eBay but they may not be made by OO.

You should check out Origami Owl… it would make a great Christmas gift for someone!

Pumpkin Cheesecake aka Pumpkin Pie Macarons

It is now NOVEMBER which means… baking time for everyone! I’ve updated the blog a bit to make it more festive for Thanksgiving. On the sidebar on the right are some recipes I’ve used in the past for Thanksgiving!
So, it’s time to go to the kitchen and start creating, we have Thanksgiving coming up!!  I have created a pumpkin cheesecake macaron recipe which I think it is pretty good! If you like macarons and you like pumpkin pie, then try this out! This could pass off as a pumpkin pie macaron recipe too. But since it has cream cheese in it, I’m going with Pumpkin Cheesecake!

After trying a bunch of different filling recipes from various sources, I came up with my own cheesecake pumpkin pie filling.

Materials needed: (affiliate links are used for your convenience)

    • a food scale (yes, you need this. I use this one)
    • a piping tip and piping bag (I like the ateco #806, I use these tips and piping bag)
    • Food coloring (the gels or dry powder works best, not the liquid store stuff)
    • A macaron template
    • food processor (I use this one)

Macarons Recipe – adapted from Laduree

275g ground almonds

250g powdered sugar

210g egg whites

210g granulated sugar

1/2 tsp pumpkin pie spice

 

1.  Mix almond meal and the powdered sugar in a food processor. Be careful not to grind too long, otherwise it will form a paste.

2. Sift the almonds, pumpkin pie spice, and powdered sugar. Set aside.

3. Weigh out granulated sugar.

4. Weigh the egg whites.  Beat them slowly on a low speed until foamy. SLOWLY add the granulated sugar to the egg whites as you beat.  Once all mixed, increase speed to medium and beat until a firm meringue forms.  You want a firm meringue with glossy peaks but not stiff peaks.  They should defy gravity and remain in the bowl if you turn it upside down.  If you tilt your bowl to the side and they are sliding out, keep beating.

5. Add the food coloring gel and mix.

6. Then fold in 1/3rd of the almond/sugar mixture into the meringue with a silicone spatula.  Once combined, add another third of the almond mixture. Add last bit.  This batter requires more deflation during this step since it creates such a poofy meringue.

7. Add the batter to a piping bag.  Pipe in rows using your template onto parchment paper.

8. Pick up the pan and beat until the counter.  The cookies need to rest on the counter between 30-60 minutes.  They are ready to go in the oven when they are dry to touch (the shell shouldn’t stick to your finger)

9.  Set the oven to 300F.

10. Bake the cookies for 13-15 minutes, one sheet at a time. They are done when they look kind of matte and seem firm when you lightly tap on them.  You can always rescue a slightly overcooked one with the maturation process that comes later, but you cannot rescue an undercooked one!!

11. Remove from paper once completely cool. If they stick to the paper, they aren’t cool yet. Or you undercooked them.

 

Pumpkin Pie Filling

4 ounces cream cheese

1/4 cup pumpkin puree

1/4 tsp (heaping) pumpkin pie spice

1/4 cup granulated sugar

 

1. In a mixing bowl, add all of the above ingredients together.  Mix together until it is a nice creamy mixture.

2. Pipe or spread the filling onto one macaron shell, then make a sandwich with the other. Done!

 

Recommend putting them in an airtight container and enjoying the next day… macarons always taste better on day 2! They will keep in the fridge for several days.

Favorite Halloween Party Ideas
One, how cool would it be to recreate the floating candle ceiling from Harry Potter? Um, AWESOME. You can do it by using old toilet paper and paper towel rolls along with faux candles. You can get the tutorial here

Have you seen the video of pirate cat? If not, you need to watch it. The cat even walks like it has a wooden leg but I think it’s really walking slowly as its plotting its revenge on its owner!

Pumpkin Festival 2015

Every year down at our local ranch they hold a pumpkin festival.  They actually hold several! One is a gourd festival and another is a Fall harvest festival. We went to both as it really is our biggest form of entertainment out here in the country!  I had fun looking at of all of the different pumpkins!!

 These pumpkins are actually REALLY BIG.  Probably *at least* 50 pounds.  I think they are fun! Maybe we’ll plant some of our next year!

Apple Picking

This past weekend my in-laws visited and my husband and I took them to go apple picking! It was a lot of fun!  Although, I thought the farm we were going to was u-pick, but instead they had all the apples already picked in bins.  Oh well, the apples were still YUMMY and we had the best fresh pressed apple juice and an amazing apple cider donut.  After the apple picking, we went home and baked a homemade apple pie! You can get the recipe HERE, it really is the best apple pie ever.

So the pie top crust ripped a little bit… oh well… it still tastes good!

Mackenzie Child’s Christmas
We got the MK Christmas catalog in the mail this week and I had so much fun flipping through it.  Here are a few things I am thinking about…
I like these Christmas candles, aren’t they fun??

 I like this chef pig ornament... for *years* in my bedroom as a kid I had a little pig animal that sat in a doll’s high chair and wore a chef’s hat (a Halloween costume from one year) and this pig totally reminds me of my childhood! But WHYYYY are the ornaments so expensive??

In fact, they had this cute little piggy ornament wearing MK boots which I loved but I didn’t buy it because it was too expensive.  Now I’m kicking myself that I didn’t get it. I have an eternal search on eBay for it but alas, no luck.

I will most likely get this JOY banner. I think it is really really cute. 

Everyday I’m Puzzling (get it, like the song?)
Had fun putting together this 1000 piece puzzle this weekend! Do you like to puzzle?  Doing puzzles is something we tend to do in the Fall and Winter when it starts to get cold out and when it’s dark by 6pm.  I realized I really like the Americana scene puzzles… each little area of the puzzle has a little scene you can work on which is fun. I bought a lot off of eBay… I swear, eBay is like the best place to shop. Mom always said, “Never Pay Retail”.  The only downside of buying puzzles off of eBay… pieces *may* be missing. Oh well! I guess that’s what you get a bargain!

Fall/Winter Fashion

Here are some things that are on my fashion wish-list, although to be honest it is still in the 80s here! I think a cape would be super fun to wear this Winter! Like the one below… 

I ‘ve had my eye on a Barbour coat for quite some time, but since it hasn’t rained here in like 5 months I can’t really see myself getting a raincoat. Although, El Nino is supposed to come and drop a bunch of rain so maybe I will need a new rain coat.

And, not that I need any more shoes, but I love the LL Bean boots.  If I still lived in the NW I would have these already… but since I don’t, I will just stare at them instead. *contains affiliate links below

The Poison Garden… Enter if You Dare!

Have you ever heard of the poison garden? I thought I would share this spooky garden since Halloween is just around the corner. It is located within the formal gardens of Alnwick Garden which is located in Northumberland, England.  Of course the garden is in England… they seem to have a garden for everything over there!

The formal garden was founded in 1750, but the poison garden was added in February 2005.  The Duchess of Northumberland was inspired by a trip to Italy after visiting the Medici poison garden.  The Medicis had their own poison garden which they grew plants used to poison their enemies!

The Duchess thought that this garden would be interesting to children… she said children “don’t care that aspirin comes from tree bark, but they would be interesting to know how a plant kills you”. She thought it was a way to educate children without having them realize they are being educated. I agree, I’m totally into this garden and I’m not a kid. (Although I AM a geeky nerd… with a degree in biochemistry!)

So, she started collecting poisonous plants for her garden.  The requirement for the plants is that they must be poisonous and have a good story to tell.

The angel trump flower, in everyone’s backyards, right? Don’t eat the pollen… you will start hallucinating!

Since this is a poison garden, all visitors are prohibited from touching or smelling the plants! Definitely do not stop and smell the roses in this garden!

Let’s look at some other plants…
Wolfsbane… famous from Harry Potter. If eaten, it causes severe GI upset, but its effect on the heart causes your heart to slow down.  However, it’s distinctive taste will likely keep you from eating too much!

 Atropa Belladona, aka, deadly nightshade! It contains hyoscine, hyoscyamine, and atropine! Say what? If eaten, it causes dry mouth, difficulty swallowing, blurred vision, drowsiness, hallucinations, delirium, elevated heart rate, coma, seizures, and death! A study in 1996 found this plant has caused more serious incidents than any other plant.

Why do people die from this plant? Because of the berries! Look how plump they are! Don’t they look delicious? As a bonus, the berries taste kind of sweet too! So you keep eating them!

One of my favorites below… Foxglove! This plant’s name in Latin is Digitalis. Heard of that before? It is the plant used to make the medicine digoxin, which has saved thousands of people since it was first created.  The problem with this plant though, is it will only save your life IF you need it for certain heart conditions…. otherwise it will cause slowing of the heart rate and heart attack!

One last look at a common plant, the laurel shrub (cherry laurel, English laurel, laurel)! The leaves contain… cyanide! Yes, it’s true! Don’t munch on these leaves or death will be on its way!  The cyanide will cause your oxygen to go low and eventually headache, confusion, and coma! Don’t get  these confused with bay leaves that are used for cooking… bay leaves are also a type of laurel bush!

While all of these plants are organic, do not let them term “organic” fool you! You see, even cyanide is organic! Buying organic this and organic that in the store is all a marketing ploy and an improper use of the term organic. They should really use pesticide-free or other terms. 

Not all of Alnwick Garden in England contains poisonous plants, if you visit there are other pretty parts of the garden…

Halloween Table Decorations 2015

Happy Halloween!! Yes, it’s a little early, but isn’t everything in blogland?  I had fun putting together this spook-tacular table!  This is my most terrifying table I have put together complete with ghastly ghosts and bloodcurdling bats!

I hung these boo-tiful bats from the chandelier… I have really enjoyed hanging stuff from the chandelier.  It elevates the table scape to a whole new level! 

I love the black and white MK courtly check placemats here… I like how they mix and match with my Juliska “Country Estate” black and orange plates.  My talented mom made me the monogrammed purple napkins last year. I love how they match the poisonous purple goblets.

Each place setting is completed with a ghastly ghost name card holder.  These took me just a few minutes to make… Simply print off your guest’s name in a ghoulish font, then cut around it in a ghost shape. With a black marker, add the ghost face.  I used a Halloween truffle to prop each ghost up. The chocolate is not only for looks, but for function. Tastes good too!

In the center of the table I put my favorite little Clapsaddle vintage Halloween postcards.  I love the owl one, it’s my favorite! Followed by the black cat to the right of it!

Also in the center of the table sit scary black cats and a happy pumpkin bear.  They sit on a cake pedestal above the mysterious velvet pumpkin patch.

Pumpkin Festival
This weekend we went to our local ranch and checked out their pumpkin festival!  How much fun!  Look at all of these pumpkins??? I’ll just share a few pictures… I think I’ll share the rest in another post during Halloween week!

 Antique Show
This past weekend we went to a local antique show.  The show was pretty small.  I had fun looking at silver patterns.  Someday I intend to buy a set of sterling silver, but I just don’t know what pattern to choose!  I think I have narrowed it down to these two:
The one below is “Versailles” by Gorham.  What I like about this set is that every piece has a different motif on the handle which I think makes it very interesting.

The other set I quite like is “Francis 1” by Reed & Barton.  What I noticed I like in sterling patterns is I like them to be ornate and over-the-top. I feel like if you’re going to dine with sterling, the pattern should be a bit over-the-top because dining with sterling IS over the top. There are some other rarer patterns of sterling I like too, but these two are much more common and are much easier to get a good bargain from an auction.

Christmas in the Stores

What? Christmas before Halloween? YES, please. I love Christmas. Christmas decorations are the cutest, so why should they be up for the shortest time of year? Makes no sense to me. The second Halloween is over I start putting up Christmas. I confess, I may be listening to some classical christmas music right now as I’m typing this up. Any who, we’ve been debating about what to put in our big giant windows that face outside this year.  I’m debating between two things… a giant Christmas wreath or a giant star.  They are around the same price. What do you think? 

iPhone Cases

We’re due for new iPhones next month so I thought I’d get a head start and look for a new case for my future phone.  I need a case for my phone because I drop the phone all. the. time.  I am going to get the rose gold iPhone 6s this time.  Here are some that I’ve got my eye on… although I just discovered on zazzle there are a million billion cases to choose from. Birthday Cake

My aunt’s birthday was this weekend and we brought her a birthday cake.  It is called a “Princess Torte”… the outside is covered in a layer of marzipan. It is filled with white chocolate whipped cream, vanilla cake, and layers of raspberry filling. Um, YUM! Isn’t it cute with the sugar flower??

Making Beautiful Lavender Sachets With Antique Linens – The Perfect Hostess Gift

I got to thinking about the round of parties and family events coming up with Thanksgiving and Christmas on the horizon.   Do you struggle with what to give the hostess who has everything?  Well, I do.  I don’t drink so I am not going to pick out a bad bottle of wine.  I think that three of these tied in a bow is perfect for a hostess gift.

What could be better than antique beautiful pieces of lace made into lavender sachets.  Check out the beautiful ones I made below.

When you grow lavender, you must harvest this wonderful flower for sachets!  The scent is heavenly, and is supposed to help with moths and critters eating your clothes.   Of course you need to dry and screen the lavender to get rid of dirt and chaff.  Right now I am still seeing lots of lavender in the yard.

I grow a number of varieties.  Hidcote and Purple Ellagance.   I seem to ignore all advice on how to grow it.  I forget to cut it when I should, and then I’ll whack it when I shouldn’t.   I cut it way down into the woody stems, which is supposed to kill the plant, but it doesn’t.

Anyway, I wound up with buckets of lavender.  I sometimes cheat and just put them in sachet bags like below.  They are handy to hang from hangers in the closet, so they are very useful.

Then I thought I would dress up the bags by sewing some antique scrap linen on it.  

I kept digging around and realized my box of “smalls”, which is mostly antique coasters and doilies less than 4″, is the perfect size for sachets.  Don’t you just love the drawnwork square below?    The round wheel lace sachets are lovely too.

Below is a fabulous tape lace square I stitched to a sheer organdy “pillow”.  I filled it with lavender and it looks wonderful beneath the lace.

Another trick is to make an organdy sachet for those little linen envelopes used for gloves, lingerie, etc.  Don’t you just love the Victorian era– they had so many pretty things for every purpose.   Now we can add beauty to our lives to a sachet by using them.  The one below is monogrammed, very charming!

I especially love these because you can refresh the lavender easily.

Below is a fingertip towel wrapped around an organdy pillow filled with lavender.  I really thought the embroidery was amazing and it makes a wonderful pillow.

Below is a sampling of fabulous coasters I’ve collected.  At first I was selling them on eBay, but you get almost nothing for these round coasters, so I decided to keep them once I got this idea.  So this is a good tip for you– They are very inexpensive to pick up on ebay, especially if you can get a lot multiple types.
Look for the lacy if you like seeing the lavender.  Or you can buy the sacks and put scrap on the front like I did.

Any vintage scrap that catches your eye can be turned into a beautiful sachet.  I also recommend using hankies with damage on them.  looks at this lovely small doily I found for $.50 at a garage sale, they had 2.
The one below was a punchwork coaster.  I should have embroidered an initial on it.  OK, next time.
I’ll end on my favorite.   Yes, they make great gifts, but don’t forget to give yourself some!.

Straw Festival – Strohfest

Today I am sharing with you a straw festival! A what? Yes, a festival of straw! The festival is held in Germany every year at my favorite “little” palace… Schloss Ludwigsburg.  This festival was  actually held this Spring, but for some reason I feel like it seems more fitting for Fall for some reason… maybe it’s because we decorate with hay bales around here for Fall?  The pictures were taken by my parents on their vacation… I am “borrowing” them 😉   

As you can see, all of the sculptures are made from straw!

I totally love the carrots and onions, aren’t they cute??

Of course, the snail is cute. Don’t mind the cherry blossoms, pink is okay for Fall too, right?? 

I hope you enjoyed the straw festival (Strohfest in German).  Schloss Ludwigsburg is seriously the best little palace over there… every Spring it hosts the straw festival and every Fall it hosts the pumpkin festival. If you’re ever in Germany… go there! So much fun!

DIY Felted Wool Acorns

I’ve got an easy DIY project for you today that’s perfect for Fall!  Felted wool acorns! Aren’t they cute??

The inspiration for this project came from these velvet acorns that are made by Hot Skwash, pictured below.

Like velvet pumpkins, velvet acorns don’t come cheap!

So, my Mom and I had the idea to make our own! We didn’t have velvet laying around, but we did find some wool felt balls at a local fabric store.

We thought, wouldn’t those little wool felt balls work perfectly as little acorns? So, we bought some acorn “hats” off of etsy.

 The project is very easy: use a glue gun and glue the felted wool ball to the acorn hat. The acorn hats are from real acorns.

 

In real life, the seed of the acorn detaches from its little hat after it hits the ground. You can find acorn hats everywhere. DONE!

See? Instantly you have the same look for less!!  I love the fun colors.  I think the colors of the velvet ones do look a little richer, but I think this looks pretty good and it cost a fraction of the price!

 

While writing this post, I searched for wool felted acorn on Etsy… turns out a lot of people make them. But they sell for about $2 each per acorn! WOW!!  The velvet acorns go for more… approx $5 each!

 

Let’s look at the cost of making your own: the felted wool balls go for $10 for 50 balls. The acorn hats are $2 for 25… so you could have 50 homemade acorns for $14… the price of 6 premade wool acorns off of Etsy OR two velvet acorns. I think I’ll take mine, thank you! Plus, it didn’t take that long to make!

Hmm, maybe I need to make more and sell them… oh wait. I already have a full time job. Never mind.
